2 lb lean lamb, cut into 1" cubes
¼ C butter
3-4 Tbsp olive oil
1 C chopped onion
½ tsp turmeric
½ tsp ground cumin
2 tsp ground coriander
½ tsp paprika
¼ tsp ground ginger
1 tsp salt
¾ C plain yoghurt
pepper
3 medium tomatoes seeded and chopped -or- 2 C canned tomatoes

Indian Condiments (use as desired topping)
Plain peanuts, banana slices, coconut, currant jelly, chutney, bacon crisps, green peppers, chopped hard bolied eggs diced tomatoes, plum jam

Directions:
In large heavy pan, brown lamb in oil. Set aside.
Saute onions until light golden.
Add all seasonings -- except paprika
Cook 5 minutes, stirring constantly
Add to meat and return to heat
Add paprika, salt, pepper and ½ C yoghurt
Stir vigorously.
Add tomatoes and simmer over low heat.

If too much sauce, cook uncovered
If too little sauce, thin with more yoghurt and cook covered

Taste.

If more seasoning is desired, put ½ tsp of each seasoning into small bowl and mix together. Then add a little at a time to meat and sauce and taste.

Continue cooking about 1.5 hours.

Serve with condiments and rice.
