2 cups almond flour
3/4 cup Swerve Sweetner
2/3 cup cocoa powder
1 tbsp baking powder
1 tsp espresso powder (optional)
1/2 tsp salt
1 cup mayo
3 large eggs
1/3 cup water
1 tsp vanilla

Chocolate frosting:

2 ounces unsweetened chocolate chopped
3/4 cup plus 1 tbsp coconut oil divided
4 ounces cream cheese
1 cup powdered swerve
1 tsp vanilla
1/3- 1/2 cup full fat coconut milk

Preheat oven to 350º
Grease 2 8 inch round or 1 13x9 cake pan. Line the bottoms of the pans with parchment and grease the parchment (i didn't)

In a large bowl whisk together the almond flour, sweetener, cocoa powder, baking powder, espresso powder and salt.

Stir in the mayo, eggs, water, and vanilla until well combined.

Pour into pan(s) spead evenly and smooth out the top.

Bake 20-25 minutes, until firm to the touch. Let cool in pan(s) at least 20 minutes. If using round pans after 20 minutes flip out onto a wire rack to cool completely. Peel off the parchment paper.

Frosting

Place the chocolate and 1tbsp coconut oil in a microwave safe bowl. Melt on high 30 second increments stirring inbetween until smooth.
Allow to cool to lukewarm.

Place remaining coconut oil in large bowl, if it is very hard nuke it for 15 seconds or so. Should be soft enough to beat w/o being melted. Add cream cheese and beat until smooth. Add the sweetener and vanilla and beat until well combined.

Drizzle in the melted chocolate and beat again until smooth. Add the coconut milk a few tbsps at a time until a spreadable consistency is acheived.
