2 Juice of two limes
¼C Extra-virgin olive oil
1T Honey
½t Ground cumin
¼t Crushed red pepper flakes
Kosher salt
Freshly ground black pepper

4 Chicken Breasts cut into chunks
4 Red Bell peppers, thinly sliced
½ Medium white onion, thinly sliced
½T Garlic Salt
½C to 1C White Wine
3 Heads of romaine hearts, chopped
2 Avocado, thinly sliced
2C Shredded TexMex cheese

Directions:
Directions:
1. In a small bowl, whisk together lime juice, oil, honey, cumin, and red pepper flakes. Season with salt and pepper.
2. In a large nonstick skillet over medium heat, sprinkle chicken with garlic salt and cook chicken until warmed through, 3 to 5 minutes lightly browned
3. Add peppers and onions to skillet and increase heat to medium-high and grill until charred and soft, 10 minutes. Deglaze the chicken, pepper, onion mixture with white wine several times during cooking
4. In a large bowl, combine romaine, chicken, peppers and onions and toss with dressing..
5. Garnish with sliced avocado and Tex Mex shredded cheese.
