3 C grated carrots
2 C sugar
4 eggs
1 ½ C vegetable oil
1 ½ t Cinnamon
2 t soda
1 t salt
2 t vanilla
2 C flour

Frosting:
1 stick butter
8 oz. pkg. cream cheese
1 pkg. Powdered Sugar
1 C chopped pecans
2 t vanilla

Directions:
Directions:
Mix and blend sugar, eggs, vegetable oil, and cinnamon. Sift soda, salt, and flour together. Sift into the sugar mixture. Add grated carrots and vanilla to cake batter. Bake in layers in 325º over for 30 minutes.

Frosting:
Cream sugar, cheese, and butter. Add nuts. Frost when cake is cool.
