1½ cups unsweetened applesauce
½ cup oil
½ cup brown sugar
¼ cup granulated sugar
1 tsp vanilla extract
2 large eggs, room temp
2 cups all-purpose flour
½ tsp salt
½ tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground allspice
½ tsp ground nutmeg
¼ tsp ground cloves

Optional
1 cup walnuts, chopped
cinnamon sugar mix to sprinkle on top

Directions:

1. Preheat oven to 350º and prep a muffin tin with liners.

2. In a large bowl, whisk the applesauce, oil, brown sugar, granulated sugar, vanilla extract, and eggs until smooth.

3. In a separate bowl, whisk the flour, salt, baking soda, baking powder and spices until evenly distributed.

4. Add dry ingredients to wet and stir with a spoon or spatula until almost completely incorporated, add the walnuts at this point if you choose, and continue to mix until thoroughly incorporated.

5. Fill pre-lined muffin tin cavities until ¾ full. Bake 20-25 minutes until a toothpick comes out clean when inserted in the center.

6. If you are adding the cinnamon sugar mixture, do so now. Allow to cool in tin for 5 minutes before removing to a rack to completely cool.
