2¾ cups all-purpose flour
1(3.4 ounce) box instant pistachio pudding mix
4 teaspoons baking powder
1 teaspoon salt
1½ cups buttermilk
1¼ oil
1 teaspoon pistachio extract
10 large egg whites
2 ½ cups granulated sugar
½ cup chopped pistachios

1. Prep the oven and pans. Position a rack in the center of the oven and preheat the oven to 425º. Line two muffin pans with liners.

2. Mix the dry ingredients. In a medium bowl, whisk together the flour, pudding mix, baking powder, and salt.

3. Mix the wet ingredients. In an other medium bowl, whisk together the buttermilk, oil, and extract.

4. Using an electric mixer or stand mixer, whisk the egg whites on low speed for 1 minute, then add the sugar. Turn the mixer up to medium-high and whisk for 8 minutes, or until think and marshmallowy, and tripled in volume

5. Mix the wet ingredients, followed by the dry ingredients into the egg mixture, once incorporated, mix in the pistachios until fully incorporated.

6. Use a scoop to fill each cavity until ¾ full. bake for 20 minutes or until the muffins are domed and a toothpick inserted into the center comes out clean.

7. Let cool 5 minutes before removing from tin and placing on a cooling rack.
