4 egg whites
8 oz. caster sugar (fine)
2 tsp. cornstarch
2 tsp. apple cider vinegar

Directions:
Directions:
Beat egg whites until stiff. Add sugar 1 tsp.at a time. Mix cornstarch and vinegar into a paste and fold into the egg whites.
On parchment paper, pour and pat with a spatula the egg white mixture into the size of a dinner plate. Make a 1/2" deep circle in the center of the mixture forming a sort of flat bowl (it will hold fruit and whip cream later). Bake at gas mark 150 for 5 minutes to set it. then reduce heat to gas mark 130 and let cook for 1 hour. Pavlova should be pale brown. Swtich off oven and leave pavlova inside to cool. Fill with whipped cream, top with berries and a sprig of mint. Enjoy!
