1 box (15 oz) cake mix - lemon
2 eggs, beaten
1/3 c oil or melted butter
1 c chopped pecans
zest of one lemon
juice of half a lemon

Grease a 9X 13 pan. Mix all together and spread in the pan. It is thick and will take some time to spread evenly. Bake at 350º for 20-25 minutes. Store in an airtight container.

Original recipe called for a yellow cake mix and 12 oz of chocolate chips. The lemon is unusual and tastes great. May try a spice cake with grated carrots, or a chocolate cake mix with nuts and cranberries.
