2 C heavy cream
5 egg yolks
1 tsp. Vanilla
1/8 tsp. Salt
1/2 C sugar

Preheat oven 325º
Preheat ramekins in pan with boiling water about half way up sides

Warm cream until hot (158º). Take off heat and let sit for a few minutes, add vanilla.

Beat yolks and sugar until light in color. Stir about 1/4 of cream into egg/sugar mixture, stir, then add rest of cream. Pour into 4 (6 oz) ramekins.

Place ramekins in pan and add boiling water until halfway up sides. Bake 30-40 minutes until centers are barely set. Cool. Once cooled, place in refrigerator for several hours or up to 2 days.

Top with white sugar and melt with torch just prior to serving.

I started making crème brûlée with Carol Brown’s recipe. I tried this when I wanted a smaller recipe. I now use this one even if I need to double.
