Sheet Pan Cajun Salmon Recipe

4 (8 ounce) skin-on salmon fillets, pin bones removed
4 T extra virgin olive oil
1 tsp Cajun seasoning
1 tsp smoked paprika
Kosher salt and pepper
1 pound baby potatoes
1 pound thick asparagus stalks, trimmed
2 cloves garlic, chopped

Directions:
Directions:
Heat oven to 425 degrees. Place salmon on a plate, skin side up. Score each fillet skin, three times. Be careful not to cut flesh. In a medium bowl, mix together 1 T olive oil, Cajun seasoning, paprika and 1 tsp salt. Pour over salmon to coat both sides and set aside to marinate while you prepare the rest of the dish.

To a rimmed sheet pan, add potatoes, 1 T olive oil and 1 tsp salt and pepper to taste. Toss to coat and roast for about 15 minutes until tender. As potatoes roast, toss asparagus with the garlic and remaining olive oil. Season with salt and pepper.

Move the potatoes to one end of the sheet pan, place salmon (skin side up) next to potatoes. Add asparagus in even layer to the other end of the pan and roast together for 10-13 minutes. If you like the salmon skin to be crispy, transfer vegetables to serving platter and broil the fish 1-2 minutes.
