2 T extra virgin olive oil
3 cloves garlic, peeled and thinly sliced
2 (15 ounce cans) white beans, rinsed and drained (navy or great northern beans)
6 cups baby spinach
Juice of ½ large lemon
Pinch black pepper
1 T chives, thinly slices
1 T parsley, chopped
1 T capers, drained

Directions:
Directions:
Heat a saucepan with 2 T olive oil. When hot, add garlic and saute’ until fragrant and light golden brown, about 30 seconds. Add beans and saute’ about 1-2 minutes, stirring occasionally. Add fresh spinach, lemon juice and pepper. Cook until spinach is just wilted 1-2 minute. Remove from heat and stir in parsley, capers and chives. Serve immediately or set aside and eat later at room temperature.
