1 lb of Bologna
3 hard boiled eggs
1/4 cup pickle relish (probably better with 1/2 cup)
1 cup Mayonnaise
Shredded cheddar cheese - optional (but recommended)

Directions:
Directions:
Add bologna, hard boiled eggs to food processor; pulse until roughly chopped
Pour bologna/egg mixture into a bowl and add relish and mayonnaise
Stir until combined
Add cheddar cheese if using (use it)
Serve on bread or toast or with crackers or eat it with a spoon. On toast with lettuce and tomato would probably be good.

I think Kate sent this to me just before our September, 2023 Fort Morgan trip. I didn't want to use a food processor because I figured the people that made this "old recipe" didn't have one when they made it (and I didn't want to have to clean it). Instead, I cut the bologna (Amish bologna from the Crestwood Meat Market) into cubes and mashed it with Mom's potato masher. I put that in a bowl, added the eggs and mashed it some more.

Those that tried it liked it, but it was general consensus that more pickle relish would be better. That's why I suggested using 1/2 cup instead of the 1/4 cup the recipe says.
