Ingredients:  
Butternut squash. Peel, seeds removed, cut in french-fry shape.
2 Eggs, beaten
½ cup Flour
½ tsp multi veggie blend seasoning. I used Roast Vegetables and fries spice blend.
¼ tsp salt to your taste
¼ tsp ginger powder
¼ tsp cinnamon
¼ cup ground parmesan cheese (optional)
1 cup bread crumbs. I like to use Panko
Spray oil.

In 3 different shallow bowls arrange: beaten eggs in the first bowl, flour in the second bowl, and the third bowl is the mixture with Panko, all seasoning, and parmesan cheese.

Step 1. Working in batches, coat the butternut squash slices in flour, shaking off the excess

Step 2. Coat it in an egg mixture

Step 3. Finally, coat it in Panko mixtureArrange the butternut squash slices in the air fryer basket or tray. Give them space.

Spray lightly with oil

Airfry at 350º for 5 min

Open the Air fryer and flip each piece on the other side and fry for an additional 4-5 min or until the breading is golden brown and crispy.

Cooldown a little bit and they are ready to enjoy! Serve them with your favorite dip. I love to dip mine in the homemade honey-chipotle sauce.
