1 lb. lean ground beef
1 lb. ground pork
⅔ cup dry breadcrumbs
2 large eggs, slightly beaten
½ cup ketchup or chilli sauce
1 tbsp. mustard
1 tbsp. Worcestershire sauce
1 tsp. salt
½ tsp. pepper
½ yellow onion, finely chopped
Grated cheddar cheese (optional)
Bacon strips (enough to cover the top)
For the Gravy:
1 tbsp. flour
1 cup of chicken stock and 1 beef bouillon cube

Directions:
Directions:
Preheat your oven to 350°. In a large mixing bowl, stir together the breadcrumbs, beaten eggs, ketchup or chili sauce, mustard, Worcestershire sauce, finely chopped onion, salt, and pepper until well combined.

Crumble the ground beef and pork over the seasoned mixture, then gently fold everything together with clean hands or a spatula - mixing just until evenly blended to keep the meatloaf tender.

Shape the meat mixture into a loaf and place it in an ungreased 13x9-inch roasting pan. Drape bacon strips across the top, letting them slightly overlap.

Bake uncovered for 70 to 80 minutes, or until the meat is cooked and a thermometer reads 160º. Carefully drain the fat from the pan, then let the meatloaf rest before slicing.

Scrape up every flavourful bit from the bottom of the roaster, then whisk in flour, stock, and bouillon cube to create a silky gravy, fit for a King!

Mom’s meatloaf was pure magic—always tender, always bursting with flavour. Her secret? Scraping every last caramelized morsel from the bottom of the roaster, coaxing those bits into a rich, yummy gravy. Paired with creamy mashed potatoes, this meatloaf-and-gravy duo was a family favourite—so good!!
