Chicken Maui Recipe

5 lb chicken, cut up
1 4 oz can pineapple chunks
3 Tbsp worchestershire sauce
1 clove garlic, minced
1 can bean sprouts, drained
1 lg tomato, cut into 8 wedges
2 tsp salt
3 Tbsp cornstarch
2 Tbsp butter
2 Tbsp brown sugar

Directions:
Directions:
Sprinkle chicken with 1½ tsp of the salt.
Place rack on shallow roasting pan.
Bake at 400º for 20 minutes, then reduce temp to 350º
Drain pineapple juice into enough water to make 1½ cups liquid.
Set pineapple chunks aside.
In small pan blend cornstarch and worchestershire sauce
Stir in the pineapple liquid and garlic. Cook and stir over medium heat until mixture boils and thickens.
Add butter, bean sprouts, brown sugar, remaining salt, and pineapple chunks.
Mix well.

Remove rack from under chicken and arrange chicken in on layer in pan.
Pour pineapple mixture over chicken.
Bake, uncovered, spooning pineapple mixture over chicken once or twice, until chicken is glazed, about 35-40 minutes.

5 minutes before baking is completed, gently stir in tomato.

Serve over rice.
