6 chicken breast halves, boneless and skinless
6 slices Swiss cheese
1/4 lb. fresh mushrooms, sliced, sautéed (opt)
1 (10¾ oz.) can cream of chicken soup, undiluted
1/3 cup dry white wine (or chicken stock)
1/2 cup milk
2 cup herb-seasoned stuffing mix
1/2 cup butter, melted

Arrange chicken in a lightly greased 13x9x2” baking dish. Top with cheese slices, and mushrooms, if using. Combine soup and wine, stir well. Spoon evenly over chicken; combine butter and stuffing mix, toss well. Sprinkle evenly over chicken. Bake at 350º covered, for 30 minutes, then uncovered for 20 minutes or until stuffing mix is nicely toasted. Serves 6.

I found this recipe in Mom’s “Make it Miami” Cookbook (given to her from Aunt Pat!) I thought it sounded comforting. But Aunt Pat said it is originally from Southern Living 1983, and that she had been making it for years. Funny how things come together like that. Great minds and tastes.
