2 TBSP olive oil
1 large onion, chopped
salt and pepper
2 cloves garlic, finely chopped
1 TBSP chili powder
2 tsp cumin
1¼ lb ground turkey
1 28-oz can fire-roasted diced tomatoes
1 15-oz can refried beans
1 15-oz can black beans, drained & rinsed
1 15-oz can kidney beans, drained & rinsed
2 4-oz cans fire-roasted diced chiles, drained
1 cup chicken broth

sour cream, grated cheese & tortilla chips for serving

Directions:

1) Heat the oil in a large saucepan or Dutch oven over medium heat. Add the onion, season with 1/2 tsp each salt and pepper and cook, covered, stirring occasionally, until tender, 6-8 minutes

2) Stir in the garlic, chili powder and cumin and cook, stirring, for 1 minute. Add the turkey and cook breaking it up with a spoon, until it begins to brown, about 4 minutes.

3) Add the tomatoes (and their juices), beans, chilies and chicken broth and bring to a boil. Reduce heat and simmer until slightly thickened, about 3 minutes.

Serve with the sour cream, cheese and chips, if desired.

I love this recipe so much, it is so hearty but light, and it keeps me full for hours. I recommend going a little heavier with the seasonings
