1 tbsp olive oil
2 cups broccoli, chopped into
bite-sized pieces
2 scallions, chopped
1 tbsp small capers
1 tsp butter, for greasing the casserole dish
2 (4 oz) white fish fillets
1/2 cup heavy whipping cream
1 tsp Dijon mustard
salt and pepper, to taste
1 tsp dried parsley
2 tbsp butter

For Serving:
2 cups leafy greens

Directions:
Set oven to 400°F to preheat. Grease a baking dish.
Saute the broccoli in oil until tender, about 5 minutes. Season with salt and pepper.
Chop the scallions and add to the pan with capers. Saute 1-2 minutes.
Transfer the veggies to the baking dish.
Arrange fish in the baking dish with the vegetables.
In a bowl, mix the parsley, whipping cream, and mustard together. Pour over top the casserole. Top with some pats of butter.
Bake in the oven for about 20 minutes, or until fish is done.
Serve with leafy greens, such as spinach.
