• 3 to 3 1/2 cups of all purpose flour
• 1 teaspoon of active dry yeast
• 1 teaspoon of salt
• 1 to 1 1/2 cups of water at 70 to 75°

Directions:
1. In a large bowl, whisk 3 cups, flour, yeast and salt. Stir in the water and add enough remaining flour to form a moist shaggy dough. Do not knead. Cover and let rise in a cool place until doubled about 7 to 8 hours.
2. Preheat oven to 450° place a Dutch oven with lid onto center rack and heat for at least 30 minutes. Once the Dutch oven is heated turn do onto a generously flowered surface. Using a metal scraper or spatula quickly shape into a round loaf. Gently placed on top of a piece of parchment paper.
3. Using a sharp knife, make a/1/4 inch deep across the top of the loaf. Using the parchment immediately lower the bread into the heated Dutch oven cover and bake for 30 minutes uncover and bake until the bread is deep, golden brown, and sounds hollow when tapped 15 to 20 minutes longer partially covering that if browning too much remove the low from the pan and cool completely on a wire rack.
