1 cup plus 2 Tablespoons sifted cake flour
½ cup sifted granulated sugar
1¼ cup egg whites (10 -12 )
¼ teaspoon salt
1¼ teaspoon Cream of Tartar
1 cup sifted granulated sugar
1 teaspoon vanilla
¼ teaspoon almond extract

Directions:
Directions:
Preheat oven to 375 º.
Sift flour with ½ cup sugar four times set aside. Beat egg whites and salt with wire whisk or rotary beater until foamy. Sprinkle in Cream of Tartar and beat until egg whites are stiff enough to hold up in soft peaks, but are still moist and glossy. Add remaining 1 cup of sugar and flour a fourth at a time. Add flavorings and beat 10 additional strokes. Add flour sugar mixture sprinkling over beaten egg whites. Fold in each addition with flat wire whisk or large metal spoon turning bowl gradually. Turn batter into ungreased angel food pan. Bake 30-35 minutes.
Remove pan from oven and invert pan one hour. Then loosen sides of cake with knife. Frost with seven minute frosting or leave plain and serve with berries.
