4 cups of rice Chex cereal
4 cups of corn Chex cereal
3/4 cup of brown sugar
1/2 cup of sugar
1/2 cup of unsalted butter (1 stick)
1/4 cup of light corn syrup
1 1/2 teaspoons of ground cinnamon
1/4 teaspoon of baking soda
Instructions:
Begin by preheating your oven to 350º F and lining one or two large baking sheets with parchment paper.
Place the rice Chex and corn Chex cereals in a large bowl and have them ready at your workstation.
In a separate medium-sized bowl, combine the sugar and ground cinnamon, setting this mixture aside for later.
Now, in a medium saucepan over medium heat, combine the brown sugar, unsalted butter, and light corn syrup. Bring this mixture to a boil while stirring continuously. Let it cook for about 1 minute.
Remove the mixture from the heat and stir in the baking soda. Then, pour this delightful concoction over the cereals in the large bowl.
Gently toss everything together until the cereals are evenly coated with the sweet sauce. Transfer the coated cereal mixture onto the parchment-lined baking sheet(s).
Sprinkle the reserved cinnamon sugar mixture generously over the cereal and then transfer the baking sheet(s) into the preheated oven.
Bake for 6 minutes, then flip the cereal over and continue baking for an additional 2-3 minutes, or until the cereal turns a glorious golden brown.
Once done, remove the mixture from the oven and allow it to cool. After it has cooled, break it up into pieces and store it in an airtight container.
