1½ c. sugar
⅓ c. plus 1 Tbsp. cornstarch
1½ c. Cold water
3 egg yolks, slightly beaten
3 Tbsp. Margarine
⅓ c. Lemon Juice
5 drops yellow food coloring
1 Pie crust

Heat oven to 400º
Mix sugar and cornstarch together in medium saucepan
Gradually add water and stir.
Cook over medium high heat, stirring constantly until mixture begins to boil. Boil and stir one min.
Gradually stir at least half of hot mixture into egg yolks
Then stir the egg yolk mixture back into the saucepan mixture and boil and stir for one min.
Remove from heat and add margarine, lemon juice and food coloring.
Pour into baked pie shell.

3 egg whites
¼ tsp. cream of tartar
6 Tbsp. Sugar

Directions:
Directions:
Place the egg whites and cream of tartar into mixing bowl and whip on high until it gets foamy.
Beat in the sugar gradually on high speed until mixture becomes stiff peaks.
Spoon onto pie, sealing edges so no filling shows. make dips with spoon.
Place in oven for 4-5 min. or until peaks become golden. Turn oven off and open door and keep pie in oven 2 more min.
Remove from oven and cut into slices, using a wet sharp knife.
