2 c. 1" rhubarb
1/3 c. sugar
1/2 c. water
1 sm. can crushed pineapple
2 pkg. strawberry jello
1 t. lemon juice

Directions:
Directions:
Combine rhubarb, sugar and 1/2 cup water; cover and cook until tender, about 5 minutes. Drain, reserving syrup. Drain pineapple, reserving syrup. Combine syrups, add water to make 2 1/2 cups. Heat to boiling. Add to gelatin, stir to dissolve. Add lemon juice. Cool. Chill until partically set; fold in rhubarb and pineapple. Pour into 1 quart mold and chill until set. Unmold.
