3 boneless chicken breasts
8 (8 inch) flour tortillas
1 cooking onion, diced
½ pkg taco seasoning mix
½ cup salsa
1 cup grated cheese
Optional toppings:
½ green pepper
1 cup shredded lettuce
½ cup sour cream

Directions:
Directions:
Preheat oven to 350ºF. Remove skin and fat from chicken. Cut into thin strips. Stir fry the chicken strips in 1 teaspoonful vegetable oil in a large skillet until no longer pink, about 5 minutes. Add the diced onion to the pan and stir fry for 1 minute. Add taco seasoning and ½ cup water to the chicken and onion: simmer 10 minutes. Prepare optional toppings and place in small serving bowls. Remove the tortillas from the oven and unwrap, being careful of steam. To serve, spoon the chicken onto the hot tortillas, top with grated cheese, salsa and optional toppings. Fold tortillas in half and eat with knife and fork.
