2 - 4 boneless, skinless chicken breasts (about 1 pound)
1 cup flour
1 t. salt
1 t. black pepper
1 t. garlic powder
1 t. dried oregano
2 T butter
2 T olive oil

Sauce
1 cup chicken stock
1/2 cup white wine or chicken stock
2 T capers, rinsed
2 T lemon juice
1 T lemon zest
1 T Dijon mustard
2 T cornstarch

Chicken:
1. Slice the chicken breasts in half if large and flatten to 1/2" thick. If the breasts are smaller, just flatten them with a mallet until 1/2" thick.
2. Mix all the dry ingredients. stir well and set aside.
3. Dredge the chicken in the flour mixture and set aside.
4. Add olive oil and butter to a large skillet over medium heat. Let butter melt.
5. Cook chicken in the skillet until cooked through, about 3 - 5 minutes on each side. The chicken should have an internal temperature of 165º.


Sauce:
1. Add all the sauce ingredients to a bowl and whisk well to ensure the cornstarch in dissolved. Set aside until the chicken has been cooked.
2. When the chicken is removed from the skillet, pour the sauce into the pan. Simmer for just a few minutes until the sauce thickens slightly.

Combine:
Add the chicken back into the skillet and spoon sauce over the top. Serve and Enjoy.
