3 c. all purpose flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 Tbsp. cinnamon
3 eggs, beaten
1 c. vegetable oil
2¼ c. white sugar
3 tsp. vanilla
2 c. grated zucchini, juice & all
1 c. chopped walnuts or pecans

Directions:

Preheat oven to 325 degrees F.

Mix all ingredients together in the order listed. Pour batter into two 8 x 4" bread pans or two muffin tins. Bake for 40 to 60 min. at 325 (less time for muffins).

Cool in pans for 20 min. before attempting to tip them out.
