Pie crust

3-4 large tomatoes sliced about 1/4 inch

8 ounces mascarpone cheese
8 ounces goat cheese
1/3 cup good Parmesan cheese

Salt - to taste
Pepper -to taste

Fresh basil
Olive oil


Put cheeses in cooled pie crust
Arrange tomatoes on top
Sprinkle with salt and pepper

Cook in 350 degree oven for about 45 minutes (until cheeses start to set)
Let cool until cheese starts to firm up but is still warm to serve
Drizzle olive oil on top and sprinkle with fresh basil

1. Bake pie crust and set aside

2. Slice tomatoes and let drain for hours between paper towels, patting dry

3. Mix cheeses, salt and pepper well
