24 ounces frozen sweet corn
1 TBL olive oil
I bunch fresh cilantro
1 red bell pepper, diced
1/2 large red onion, diced
2/3 cup cotija cheese

Dressing
3 TBL sour cream
2TBL mayo
4 TBL lime juice (about 2 limes)
1/2 TSP cumin
1/2 TSP paprika
1/4 TSP chili powder
1/4 TSP kosher salt

Directions:
Directions:
1. Heat olive oil on medium heat. Add corn and cook until slightly charred. Put aside in bowl.
2. Add pepper, cilantro and onion and mix well (reserve some cilantro for garnish)
3. Add dressing and mix well
4. Add 2/3 of cotija cheese and mix well
5. Garnish with remaining cheese and cilantro
6. Store for up to 8 hours
