4-5 Med. Carrots (or a frozen bag of peas and carrots)
1-1 1/2 lbs. Ground Beef (or combination of ground beef and pork)
1 c. cracker meal or bread crumbs
1 egg
1 tsp. salt
1 tsp. Pepper
1 Sm. Green Pepper chopped
1 Sm. Onion chopped
2 cans Tomato soup
1 can Chicken Broth
1 cup Sour Cream

Directions:
Directions:
Take your carrots and cut into slices then put in a large pot with just enought water to cover them and then add your tomato soup.

Take ground beef, green pepper, onion, egg, cracker meal, salt, and pepper and mix into a bowl. Once well mixed roll into 1-1 1/2in balls. Then fry in pan until meatballs are browned. Remove from pan and drain on paper towel. Place in pot.

Add carrots (or the bag of peas and carrots) and chicken broth. Let simmer for a few minutes.

Remove from heat. Add a couple spoonfuls to your sour cream and blend. Once blended add to soup.

Serve and enjoy!
