Grab yourself 5 beautiful potatoes, wash and scrub those baby's. Poke with a knife or fork so they don't explode like most things in life. Spray with some oil, and then into the oven for 40-60 minutes at 400 degrees.
Now get whatever pan you like, over medium heat with some oil. Add a big handful of onions (about 3/4 cup) after you cried a little, add to pan until they become fragrant add 4-5 cloves of minced garlic!
Throw in 2lbs lean beef(97/3) or whatever is your favorite. NOW SPICE!! It's the secret to life! I just went with lots of paprika, chili, garlic, onion and a hefty pinch of salt and pepper.
Once browned add your frozen bag of veggies(l used carrots, peas, green beans). Mix well and remove from heat.
After our potatoes have cooled slightly, carefully use a spoon and scoop out the middle. Just be careful not to break through to the outside.
Add to the potatoes we scooped out, 3 Tbps. butter, (yes butter!) 1/2 cup lite sour cream, about 1 cup stock (cook's choice), and finish with a pinch of salt and pepper. Mix till you have a smooth texture.
Now we want to add to our skins a big ole' scoop of our meat mixture and top with those mashed potatoes.
Now enjoy the delicious taste of all your hard work and stay on track with your macro's.
