2c. loosely packed fresh greens (basil, chard, spinach, carrot tops... whatever)
Pinch of Salt
1 clove garlic (or to taste)
2 Tbsp. nuts (ie. pine nuts, walnuts, pecans...etc.)
1/2 c. Extra Virgin olive oil (or more as needed)
1/2 c. Freshly grated cheese (Pamesan, Romano, smoked gouda...)
Freshly squeezed lemon juice (to taste)

Combine the greens with a pinch of salt, the garlic, the nuts, the lemon juice (if using) and about half the oil in a food processor or blender. Process, scraping down the sides of the container if necessary and adding the rest of the oil gradually until your desired consistency is reached.

Stir cheese in by hand before serving.

Let's be honest: pesto makes everything delicious. You're probably familiar with the standard basil pesto, but one of the great revelations I've had as a home cook is that you can make pesto out of pretty much anything green and leafy you happen to have on hand. One of my favorite variations is made with Swiss Chard, pecans and smoked gouda cheese, but there are a million variations. Get creative!
