2 double recipes of bread dough (see recipe index)
1 large pack sausage from Sam’s (22 pieces) or 4 lbs. ground Italian sausage
2 lbs. mozzarella, shredded
3 lbs. onions, sliced in thin wedges

Directions:
Directions:
Make dough and divide into 24 pieces, let rise covered, until double in size. Fry together loose sausage (take sausage out of casing) and onions until sausage is not pink and onions are lightly browned. Let cool for about 1/2 hour. Shred mozzarella and set aside. Stretch/roll each piece of dough into about 10” circle. To assemble: Place 3/4 cup meat mixture on half each circle. Divide cheese over 24 rounds and fold in half and crimp dough closed. Place on cookie sheet and let rise again. Bake at 375º for about 15 minutes or until lightly browned. TIP: These can be made ahead, cooled and then frozen until needed.
