3 lbs. strawberries, cut up w/ melonballer
1 T bottled lemon juice
1½ to 2 C sugar

Toss to mix completely, cover & leave on counter 1 hour. Put in large pan (4qt) on medium high heat, stirring till boiling, stir constantly while cooking 20 minutes. Keep cooking until thickened. When its done, foam will be almost gone & boiling will sound thick at least 217º

To know if jam is ready, you can do the Frozen plate test- put a spoonful of jam on a frozen plate, run finger through, turn sideways. If it doesn't run its done! If it runs continue boiling and check every 5 minutes.

Put boiling water in jars to warm glass. Add hot jam, put on top & ring; date. Keeps in fridge for 6 months. Can be water bathed for longer storage.
