1 (9 oz) ready crust graham cracker or Oreo crust
2 (8 oz.) pkgs. cream cheese, softened
3/4 cup sugar
1 tsp. finely grated lime zest, optional
1/3 cup Nellie & Joe’s Key West Lime Juice or fresh lime juice
1 (8 oz) tub cool whip topping, thawed

Beat cream cheese and sugar, in a large bowl with electric mixer on medium speed, until well blended. Add lime juice and zest, mix well. Gently fold in the whipped topping; pour over crust. Refrigerate three hours or until firm.

On one of our many visits to Florida, we went to the No Name Pub, on Big Pine Key. Lynne’s parents owned a home there 25 years ago. She suggested we visit this pub, if we can find it. We did. Great food, ice cold beers and a delicious key lime pie. This recipe is the closest I could get to theirs. Delicious!
