½ c. orzo rice
1 dash of salt
4 c. whole green grapes
2 c. whole red grapes
2 (284ml) cans mandarin oranges
1 (small clamshell) strawberries
4 med. granny smith apples
30 pitted cherries
cool whip
½ to 1 pkg. coloured mini marshmallows

Directions:
Directions:
Begin by boiling water in a pot, adding a dash of salt. Once the water reaches a rolling boil, add the orzo rice and cook according to the package instructions.

While the rice is cooking, prepare the fruit. Wash the green and red grapes, removing them from their vines. Open and drain the two cans of mandarin orange slices. Wash the strawberries and quarter them. Cube the Granny Smith apples, removing their cores. Wash and pit the cherries.

Once the rice is cooked, drain it under cold water to prevent sticking and make it easier to toss with the fruit.

In a large mixing bowl, combine the cooked and cooled orzo rice with the prepared fruit. Add the Cool Whip or dairy-free alternative, stirring until everything is fully coated.

Lastly, add in the marshmallows, gently tossing them through the salad.

Serve the fruit and rice salad chilled and enjoy!

I've put my own spin on Ambrosia Salad by opting for fresh fruit instead of canned, giving it a vibrant and flavorful twist. This salad is a summer favorite of mine, bursting with juicy fruit flavors that are perfect for those warm days.
