4 boneless, skinless chicken breasts, cut into bite sized pieces
3 tbsp butter
1 cup onion, diced
3-4 cups mixed vegetables (peas, carrots, red peppers, mushrooms, etc)
1 can cream of chicken OR mushroom soup
1 cup milk
⅓ cup flour
˝-1 tsp salt
2 boxes Stove Top Stuffing Mix

Directions:
Directions:
Preheat oven to 400 degrees. Cook stuffing according to directions and set aside. In a large frying pan, cook chicken with 1 tbsp butter. Once chicken is thoroughly cooked, pour chicken evenly over bottom of a 9x13 pan. In that same frying pan, sauté all vegetables with 2 tbsp butter. Once vegetables are done (softened slightly), sprinkle them evenly over the chicken. In a medium saucepan, combine milk, soup, flour and salt. Stir constantly (to prevent lumps) over medium heat until mixture comes to a boil. Pour soup mixture over chicken and vegetables then stir well to evenly coat. Spread stuffing evenly over the chicken and vegetable mixture. Bake for 25 minutes.
