¾ cup shortening
1 ⅓ cup brown sugar
½ tsp. vanilla
2 eggs, salt
½ tsp. grated lemon peel + 2 tbsp. lemon juice
1 cup sifted flour + 1 tsp. baking powder
¼ tsp. cinnamon + ¼ tsp. nutmeg
1 cup quick-cooking rolled oats
½ cup walnuts

Directions:

Cream shortening, sugar, vanilla and eggs until fluffy. Add lemon peel and juice. Beat well.

Mix flour, spices, and baking powder into the creamed mixture. Stir in rolled oats and nuts. Spread into a greased 13 x 9 x 2 " pan. Bake 350º for 20 to 25 minutes. While warm, top with lemon glaze.

Glaze: Mix 1 ½ cups icing sugar, 1 tbsp. lemon juice with a few drops of cream to make the glaze the right consistency.
