12 (or more) Medjool fresh whole dates, pitted
Marzipan almond paste
½ cup of coarse white or demerara sugar
½ cup of dark chocolate chips for melting (optional)
¼ cup of chopped pistachios
12 almonds, pecans or walnuts (optional)

Directions:
Directions:
Warm the marzipan at room temperature and roll each log into 12 equal pieces about ¾ inch long.

Insert one marzipan log lengthwise into each date. Roll dates in the sugar, coating well.

If drizzling with chocolate, melt 1/2 cup of chocolate chips in a small bowl over simmering water. Dip each stuffed date halfway into the melted chocolate. Set on a parchment-lined baking sheet, stuffed-side up. While the chocolate is still wet, sprinkle with a pinch of chopped pistachios, or add a nut on top! The possibilities are endless!

Mom always used the freshest and largest Medjool dates she could find. She called them the 'King of Dates'! Any leftover marzipan from icing Christmas cakes was used to make these chewy, rich treats. So good!!
