3 lbs pickling cucumbers (short stubby ones)
1 lb of onions
1/4 cup pickling & canning salt
2 cups sugar
2 tablespoons yellow mustard seed
2 tsp celery seed
2 tsp ground tumeric
2 tsp black pepper corns
4 cups apple cider vinegar


Directions:

1) Wash and cut cucumbers to desired width and shape, discarding ends. We like coins which is sliced in round shape.
2) Place cucumbers in a large bowl.
3) Cut onions into thin slices, not too thick, not too thin. Cut the ends of onion and toss.
4) Place onions in bowl with cucumbers.
5) Cover cucumbers and onions with water and ice, let sit for 2-3 hours.
6) In a large pot, mix all other ingredients and bring just to a boil and turn off heat.
7) Mix cucumbers and onions into brine and mix well.
8) Place cucumbers and onions into sterilized jars, don't over stuff them.
9) Add brine (liquid) to fill jars (pint size) to 1/2 inch head space and de-bubble.
10) Wipe rims of jars, place lid on jar, screw on ring finger tight.
11) Place jars into hot water bath with at least 1 inch of water over the jars.
12) Cover pot and bring water to boil for 10 minutes process.
13) Turn off heat and let sit for an additional 5 minutes.
14) Remove jars from water, place on a towel and let sit 18-24 hours.
15) Check the lids to make sure all have sealed. If any have not, place them in the refrigerator and enjoy in a few days.
16) For best results, let the pickles rest in the jars for 4-5 weeks. Best if eaten within a year.

Easy recipe - these pickles were delicious. Vincent had a great crop of these cucumbers in 2023. We put away a lot of pickles.
