For the Chicken:
2 boneless, skinless chicken breasts
Salt, pepper to taste, Olive oil (for brushing)

For the Stuffing:
½ cup breadcrumbs
¼ cup grated Parmesan cheese
¼ cup chopped spinach
¼ cup diced red bell pepper
¼ cup diced onion, 1 clove garlic, minced
¼ tsp dried Italian seasoning
Salt and pepper to taste
¼ cup shredded mozzarella cheese (opt)

Preheat air fryer to 375°. In med-sized bowl, combine all stuffing ingredients: breadcrumbs, Parmesan cheese, spinach, red bell pepper, onion, garlic, dried Italian seasoning, salt & pepper. Mix well. Using sharp knife, make a horizontal slit in each chicken breast, creating pocket for stuffing. Be careful not to cut all the way through.
Stuff each chicken breast with prepared stuffing mixture. If desired, add a bit of shredded mozzarella cheese on top of stuffing for extra flavor. Season outside of chicken breasts with salt & pepper; brush them lightly with olive oil. This will help chicken get crispy in air fryer. Place stuffed chicken breasts in air fryer basket, leaving space between them. Cook preheated air fryer 375° 20-25 min. Cooking time may vary depending on thickness of chicken. Halfway through cooking, you can flip chicken to ensure even cooking. Once chicken is cooked through and has crispy golden brown exterior, remove from air fryer. Let stuffed chicken breasts rest for few min before serving. This helps juices redistribute, keeping chicken moist. Serve with favorite side dishes, such as roasted vegetables, salad, or mashed potatoes.
