6oz pasta
1 pepper
About 12 green beans or mange tout
Handful of baby spinach chopped
2 tomatoes
3oz grated cheese
200g frozen broad bean or soya beans or peas or a mixture
1 150g pack of bousin soft cheese
Salt and pepper
a little milk

Directions:
Directions:
1.Half fill a large pan of water and boil
2.Chop pepper and trim beans
3.Add pasta, pepper and green beans to pan and also the frozen beans. Stir well.
4.Cook until tender but not soggy
5.Drain well into a colander then return to the pan.
6.Add the pack of soft cheese breaking it up
7.Add the tomatoes and spinach stirring well to combine everything
8.Add salt and pepper and a little milk if too stiff but it souldn't be runny
9.Put in a large overnproof dish and sprinkle the grated cheese on top
10.Cook at 180º for about 40 minutes until browned on top

This is a dish that is useful to use up any left over vegetables as the measurements do not have to be precise and you can add other things to experiment. It is also useful because it can be made when you have time then kept in the fridge uncooked for several days to take out on one of those busy times when you come home exhausted. Before you take your coat off you heat the oven and pop it in, then when you have sortted yourself out it will be all ready!
