2 large cans (29 oz) of peaches in heavy syrup
2 boxes of Jiffy cake mix (yellow or white)*
Butter
Sugar
Cinnamon (optional)

Directions:
Directions:
1. Open peach cans. Dump one can into the dutch oven.
2. Drain syrup from the second can into the empty first can (if you're aiming for camping authenticity) or a mixing bowl (if that's just easier).
3. Dump drained peaches into the dutch oven.
4. Pour cake mix into heavy syrup and mix until combined.
5. Drizzle cake and syrup mixture over the peaches. Sprinkle sugar and cinnamon over the top.
6. Cut several thin pats of butter and place over the cake mixture (2-3 inches apart).
7. Place dutch oven directly in coals, scoop a generous helping of coals onto the lid. If needed, you can stack a second dutch oven on top of the first one. It's done when the cake is fluffed up and lightly browned.

*Jiffy cake mix may be regional. If you find it is unavailable in your area, 18 ounces of any yellow or white cake mix will work. It does not need to be expensive.

This is a delightful treat baked in a dutch oven over the coals once after making tin dinners. You'll want a cast iron dutch oven to make this over the coals of your campfire. You can line it with foil to make clean up easier, if desired. My husband learned to do this when camping with his Boy Scout troop. He brought it to my parents' cabin community and to our annual cabin weekend with our friends. But because you need coals (and most people get excited for s'mores) it's usually made at the end of the evening and only those who are able to stay up late enough get it hot. If there are leftovers, they're great in the morning, but that doesn't happen often.
