Perogi Dough Recipe

2 c flour
1 egg
1/2 c warm water
1 t salt
2 T oil

Directions:
Directions:
Mix all ingredients together lightly in a ball.
Knead until smooth.
Let rest, covered for 30 minutes.
Using half of the dough at a time, roll out to 1/8 inch thickness.
Cut circles with biscuit cutter or floured glass.
Fill with a golf ball size of filling.
Pinch to seal.
Boil 5-8 minutes, until floating.
Serve with butter or fry in butter.

Fillings can be :
Potato and onion
Potato and cottage cheese
Fruit

Vera Beller, a friend from Cranbrook Fellowship Baptist Church divides her dough into 24 and uses her hand to roll out the dough, fill it and seal. She said it goes much faster. She has mada many, many perogies in her life. I went to school with her kids in Jaffray.
