2 C whole milk
2 C heavy cream
1 Tbs vanilla bean paste
4 egg yolks
1/2 C sugar
1/4 tsp xanthan gum

Directions:
Directions:
In medium saucepan over medium-high heat, combine milk and cream and bring just to a boil. Add vanilla and remove from heat. Let sit at room temperature for 30 minutes.

In another saucepan, beat together egg yolks, sugar, and xanthan gum until light and airy. Stir warm milk mixture into egg yolk mixture. Heat over low heat until somewhat thickened and registers 185º. Remove from heat and let cool to room temperature, stirring occasionally. Refrigerate overnight.

Pour into ice cream maker and process 2-25 minutes. Transfer to container and freeze.
