1 C whole milk
1 1/4 C heavy whipping cream, divided
1/4 C sugar
3 eggs
1 C caramel candies
1/2 tsp flaked sea salt
1/2 tsp vanilla

Directions:
Directions:
In medium bowl, whisk eggs until frothy. Set aside.

In medium saucepan over medium-high heat, bring milk, 1 cup cream, and sugar just to a boil. Slowly temper eggs by adding half the hot milk mixture into the eggs whisking constantly. Pour mixture back into saucepan and cook over medium-low heat, stirring constantly, until it thickens enough to coat back of spoon. Do not let boil. Should register 170º

Pour custard through fine mesh strainer into large metal bowl. Set aside.

In separate saucepan, add caramel, remaining 1/4 cup cream, salt, and vanilla. Warm over medium-low heat until smooth. Stir into custard mixture completely. Cover surface with plastic wrap and refrigerate overnight.

Process in ice cream maker 20-25 minutes. Transfer to container and freeze.
