1/2 C dutch-process cocoa
1 C sugar
3 Tbs Instant ClearJel or cornstarch
1/4 tsp salt
1 C water
1 Tbs vanilla OR 1 Tbs espresso powder
2 C whole milk
1 C semisweet or bittersweet chocolate, chopped
1/4 C Kahlua

Directions:
Directions:
In medium saucepan, whisk together cocoa, sugar, ClearJel or cornstarch, and salt. Slowly whisk in water, vanilla or espresso powder, and milk. Bring to a boil over medium heat, whisking frequently at first and constantly as it warms. Remove from heat and stir in chocolate, whisking until it melts.

Pour mixture into bowl, stirring occasionally as it cools. Place plastic wrap on surface of chocolate and refrigerate overnight.

Pour mixture into ice cream maker and process 20-25 minutes. Stir in Kahlua last minute. Scoop into container to freeze or eat immediately.
