1/4 c. Butter
1/2 c. finely diced onion
1/2 c. finely diced carrot
1/2 c. finely diced celery

1/4 c. flour
1 1/2 T. cornstarch
1/8 tsp baking soda

1 quart chicken stock ( I use 2 Knorr bouillon cubes and water)
1 quart milk

1 c. Velveeta cheese ( more if you want it cheesier)
salt and pepper to taste.

1. Melt butter in the pot you are making soup in.

2. Add vegetables and saute over med heat to soften

3.Add flour, cornstarch, and Baking soda to make a roux.

4. Add Stock and diced up velvet and stir until cheese is melted.

5. Finish by adding the milk and heating. Salt and pepper to taste

Hank and Hellen Ickes were Mom and Dads good friends down in Naples. Nick was their son and was the GM Cadillac dealer in Robinson Illinois and sold us cars for years. Nick had us over once for lunch while picking up a car and served us this soup with hamburgers and french Fries soaked in vinegar. It is just a good brothy and not to cheesy goopy soup. Also great with sloppy Joes.
