1 lb. hot or sweet Italian Sausage, casing removed
1 green pepper, thinly sliced
1 medium onion, sliced and separated into rings
4 C. meatless spaghetti sauce
1 C. water
16 oz. ridged mostaccioli, cooked 8 minutes and drained (rigatoni is also good)
2 C. shredded mozzarella cheese, divided
1/2 C. Parmesan cheese, grated

In large skillet, over medium heat, cook sausage, pepper and onion 6-8 minutes, stirring occasionally to break up sausage. Stir in spaghetti sauce and water, bring to boil. Reduce heat; simmer 10 minutes. In large bowl combine mostaccioli, 1.3/4 C. mozzarella and Parmesan; stir in sauce. Turn into 13 X 9 baking dish. Sprinkle with remaining 1/4 C. mozzarella. Bake in 350º oven 30 minutes or until heated through.
