4-5 avocados
1-2 Serrano or jalapeño, seeded and finely chopped, can leave some seeds for heat.
1/4 of white or red onion, finely chopped
Juice of one lime (or lemon)
1-2 Tbsp cilantro, chopped, or to taste
1 tsp salt
Extra virgin olive oil, just a drizzle, or to taste

Slice the avocados in half, remove the pit, and scoop into a mixing bowl, Mash the avocado with a potato masher, chunky, or smooth. Mix in onions, serrano/jalapeño, citrus juice, and salt. Stir in cilantro and a splash of the oil. Taste and adjust seasonings. Covered with plastic wrap so it touches the surface and then cover with another layer of plastic wrap. Chill. Serve at your choice of tortilla chips. Serves 6-8.
