1 medium Egg Plant
1/2 c. cracker crumbs
1/4 c. butter, melted and cooled
2 eggs, beaten
1 T. onion, minced
1/8 t. black pepper
1/2 c. grated sharp Cheddar Cheese

Directions:
Directions:
Peel and chunk egg plant. Soak in salted water 20 minutes. Rinse in cold water. Cook in a very small amount of water about 3-5 minutes or until tender. Stir in butter, eggs, cheese, pepper and onion. Place in ungreased baking dish, top with cracker crumbs and bake at 350 degrees for 30 minutes or until brown.
